Pollo alla senape

Il pollo alla senape è un classico della cottura in forno, la senape si sposa bene con le carni di pollo e di maiale, gli da una spinta in più. Cotta la senape mi piace molto perché perde un po’ del suo piccante, come salsa a crudo invece no, ma è un mio gusto personale.

Pollo alla senape e pancetta

Ingredienti Pollo alla senape:

Pollo 8 tra sovracosce e cosce circa 1 kg

Pancetta affumicata o bacon a fette sottili 150 g

Senape 100 g

Aglio 5 g

Rosmarino 2 g

Salvia 5 g

Vino bianco 100 g

Olio extravergine di oliva 30 g

Sale/pepe q.b.

Pollo alla senape

Preparazione Pollo alla senape:

Per preparare il pollo alla senape e pancetta iniziate lavando ed asciugando bene il pollo. Private ciascun fuso della pelle. Incidete quindi ciascun fuso con un taglio netto seguendo il lato lungo della carne e spennellate poi i fusi con la senape.

Avvolgete ciascun fuso con la pancetta. Poi adagiate i fusi di pollo sulla teglia, disponendoli uno accanto all’altro.

Irrorateli con un filo di olio ed aromatizzate con aglio, i rametti di rosmarino spezzettati. Aggiungete nella teglia anche le foglie di salvia.  Regolate di sale e pepe.

Infine versate il vino sui fusi. Cuocete in forno statico preriscaldato a 180°C per 50 minuti (o in forno ventilato a 160°C per 40 minuti). Controllate sempre la cottura prima di spegnere il forno perché questa dipenderà dalla grandezza dei fusi stessi. Mentre i fusi cuociono, raccogliete un paio di volte il liquido rilasciato dalla carne e bagnate nuovamente la superficie, per evitare che secchi.

senape delicata 50 g
maionese 50 g
miele 50 g
aceto di mele 1 cucchiaio

PER LA SALSA AL MIELE

Mischia gli ingredienti in una ciotolina e tieni da parte la salsa in frigorifero coprendo la superficie con pellicola trasparente fino al momento dell’utilizzo.

Finally pour the wine on the spindles. Bake in a preheated static oven at 180 ° C for 50 minutes (or in a fan oven at 160 ° C for 40 minutes). Always check the cooking before turning off the oven because this will depend on the size of the spindles themselves. While the spindles are cooking, collect the liquid released from the meat a few times and wet the surface again, to prevent it from drying out.

delicate mustard 50 g

mayonnaise 50 g

honey 50 g

apple cider vinegar 1 tbsp

 

METHOD

FOR THE HONEY SAUCE

Mix the ingredients in a small bowl and set the sauce aside in the refrigerator, covering the surface with cling film until ready for use.
