Ricetta del baccalà alla livornese

Se comprare come me il Baccalà sottosale (costa meno) per tre/quattro giorni, dovete tenerlo a bagno e cambiare l’acqua 2 volte al giorno.

Una volta bagnato diventa il 40% in più del peso originale da secco.
Conviene anche rispetto al baccalà congelato che comunque ho trovato molto buono e vale la pena comprare se non si hanno quattro giorni di tempo per preparare la ricetta.

Ma torniamo a noi e vediamo come si fa questo baccalà alla livornese.

Baccalà alla livornese Ingredienti:

Baccalà dissalato 600 g
Patate 250 g
Farina 00 100 g
Vino bianco 40 g
Sale fino q.b.
Pepe nero q.b.
Olio extravergine d’oliva q.b.

PER IL SUGO

Pomodori pelati 800 g
Cipolle 1
Aglio 1 spicchio
Sale fino q.b.
Pepe nero q.b.
Olio extravergine d’oliva q.b.

Procedimento baccalà alla livornese:

Per prima cosa ho preparato il sugo ovvero tagliati la cipolla, aggiungere l

aglio, messo a soffriggere in una padella con un poco d’olio.

Aggiungere i pomodori pelati, sale e pepe, coprire con il coperchio e cuocere a fuoco medio per circa 20 minuti.

Nel frattempo infarinare accuratamente i tranci di baccalà, quindi scaldate un filo di olio in un tegame e far rosolare su entrambi i lati, salare e pepare. Sfumate con il vino bianco e lasciate evaporare. A questo punto aggiungere la salsa e cucinare con il coperchio per 45 minuti.

Intanto pelare le patate, e tagliate a cubetti, aggiungere anche le patate e proseguite la cottura finché non è pronto. Aggiustate di sale e pepe se necessario, servite ben caldo.

Livornese codfish procedure:

First I prepared the sauce or cut the onion, add l

garlic, put to fry in a pan with a little oil.

Add the peeled tomatoes, salt and pepper, cover with the lid and cook over medium heat for about 20 minutes.

In the meantime, flour the cod slices carefully, then heat a drizzle of oil in a pan and brown on both sides, salt and pepper. Pour in the white wine and let it evaporate. At this point add the sauce and cook with the lid on for 45 minutes.

Meanwhile, peel the potatoes, and cut into cubes, also add the potatoes and continue cooking until it is ready. Season with salt and pepper if necessary, serve hot.
