Buon appetito Angela.

Legume and sausage soup with slow cooker – english version

When the cold starts I love making soups in the evening, and legume soups are very nutritious, if you don’t eat meat, prepare this recipe without the sausage.

Many are curious to know how I am with this slow cooker pot and especially where I find the recipes. At the beginning I looked for the recipes on the net but then when you understand how it works (it’s not difficult) you can easily adapt your traditional recipes, so that you do everything yourself (the slow cooker), basically you need to halve the liquids and lengthen times compared to traditional cooking.

If you have dry pulses and little time, use the quick soak. Rinse the legume and transfer it to a pan. Cover it with water, equal to twice the volume of the legume. Bring to a boil and simmer for about 3 minutes. Turn off, cover the pan and let it rest for 1-2 hours. Rinse well and remove the soaking water.

Legume and sausage soup ingredients:

– 1 kg of legumes – 2 liters of water – 3 sausages of about 100 g each – 2 chopped onions – 1 sliced leek – 2 chopped carrots – 1 chopped celery stalk – 1 nut for broth – 1 teaspoon chopped fresh thyme – 2 tablespoons of olive oil – salt and pepper.

Preparation of legume and sausage soup with the slow cooker:

Soak the pulses in water for at least 3 hours, preferably overnight. I often use mixed soups that do not need to be put in water in this case, however, it takes a lot of water in the slow cooker because the legumes absorb it all and you risk burning the dish. Calculate that you have to fill the pot for 3/4 in my soup in addition to the mixed legumes there was also spelled is very good, if you have never tried buy them.

Pour all the cut vegetables, peas, olive oil and thyme into the slow cooker pot. Add 3 liters of water, the nuts and the sausages. Switch on the appliance and select the “LOW” temperature, adjust the timer to 5 hours. Before serving, remove the sausages, adjust the seasoning. Cut the sausages into rounds and put them in the soup. Enjoy your meal Angela.
