Torta Zebrata

Era da un po’ che volevo provare a cucinare questa torta zebrata, in realtà è un semplice panettone bigusto, la particolarità è che si mettono a cerchio i due impasti invece di metterli uno sull’altro, così viene a strisce quando si taglia.

Ingredienti torta zebrata:

Farina 00 300 g

Fecola di patate 140 g

Burro 150 g

Latte 120 ml

Lievito in polvere per dolci 1 bustina

Uova medie 6

Baccello di vaniglia 1

Zucchero 220 g

Cacao amaro in polvere 30 g

Procedimento torta zebrata:

Prendete una ciotola, versatevi il burro a temperatura ambiente assieme allo zucchero e ai semi della bacca di vaniglia. Quindi lavorate gli ingredienti con uno sbattitore elettrico o ciò che utilizzate abitualmente (personalmente posseggo il Bimby).

Aggiungete le uova (sempre a temperatura ambiente perché montano meglio), una alla volta e continuate ad amalgamare gli ingredienti. Quando il composto sarà liscio e spumoso, aggiungete la farina, 100 gr di fecola e il lievito preventivamente setacciati.

Aggiungete per iniziare 100 ml di latte ed eventualmente altri 20 ml se il composto dovesse essere troppo asciutto.

Dividete ora il composto in due parti uguali, quindi aggiungete in una ciotola il cacao setacciato e mescolate per amalgamare bene gli ingredienti; nell’altra ciotola unite 40 gr di fecola di patate.

Prendete una tortiera imburratela e infarinatela oppure copritela di carta forno bagnata e strizzata. Quindi cominciate a versare un paio di cucchiai di composto chiaro al centro della tortiera; sopra il composto chiaro versato, mettete (sempre al centro) due cucchiai di composto scuro, continuate così formando tanti cerchi concentrici come quelli di un albero.

Infornare in forno statico preriscaldato a 180° per circa 50-60 minuti, verificate la cottura con uno stecchino, buona merenda Angela.

Zebra cake ingredients:

Zebra cake process:

Take a bowl, pour the butter at room temperature together with the sugar and the seeds of the vanilla bean. Then work the ingredients with an electric mixer or what you usually use (I personally own the Thermomix).

Add the eggs (always at room temperature because they mount better), one at a time and continue to mix the ingredients. When the mixture is smooth and frothy, add the flour, 100 g of starch and the yeast previously sieved.

To start, add 100 ml of milk and possibly another 20 ml if the mixture is too dry.

Now divide the mixture into two equal parts, then add the sifted cocoa in a bowl and mix to mix the ingredients well; in the other bowl add 40 g of potato starch.

Take a cake pan, butter it and flour it or cover it with wet and squeezed parchment paper. Then begin to pour a couple of spoons of clear mixture in the center of the pan; over the poured light mixture, put (always in the center) two spoons of dark mixture, continue thus forming as many concentric circles as those of a tree.

Bake in a preheated static oven at 180 ° for about 50-60 minutes, check the cooking with a toothpick, Angela good snack.
