Cernia con i pomodorini

Buongiorno, la settimana scorsa vi ho lasciato la ricetta della cernia al limone. Mio figlio sta continuando ad andare a pescare e questa volta mi ha chiesto che gli cucinassi la cernia con i pomodorini.

A lui piace molto che poi la faccio a pezzettini e la aggiungo alla pasta, in genere compro la calamarata per fare questo che un tipo di pasta.

Se non la conoscete ha la forma di tubettoni grandi, meglio ancora se riesco a trovarli rigati, perché il sugo di pomodoro così si attacca meglio.

INGREDIENTI PER 4 Persone cernia ai pomodorini:

Cernia 1 kg
Pomodorini oppure pomodorini pelati 500 gr
Olive taggiasche 2 cucchiai
Capperi sotto sale (se piacciono)
Aglio 2 spicchi
Olio extravergine di oliva Quanto basta
Timo Quanto basta
Prezzemolo Quanto basta
Origano secco Quanto basta
Pepe/Sale Quanto basta
Pasta 500 gr
Un bicchiere di vino bianco

Procedimento cernia e pomodorini:

Se avete i pomodorini freschi lavateli e tagliateli in quattro parti altrimenti: Pelate l’aglio e fatelo soffriggere con qualche cucchiaio di olio extravergine di oliva in una padella antiaderente capiente. Aggiungete i pomodori pelati (oppure i pomodorini) fate insaporire per 5 minuti.
Regolate di sale e aggiungete le olive snocciolate (intere o tagliate in base al vostro gusto). Se lo gradite potete aggiungere anche qualche cappero dissalato.
Aggiungete la cernia bagnate con il vino bianco e chiudete con il coperchio.

Il tempo di cottura dipende dalla grandezza della cernia, la mia ci ha messo una mezz’oretta, voi tirate sempre la pinna che sta sulla schiena, quando si toglie, significa che il pesce è pronto.

Aggiungete il pepe macinato e le erbe aromatiche (prezzemolo e timo tritato) e l’origano secco. Eliminate l’aglio.
Servite la cernia con i pomodorini calda accompagnandola con abbondante pane tostato e olio extravergine di oliva a crudo.

Oppure come faccio io, preparate la pasta in abbondante acqua salata, pulite la cernia fatela a pezzettini e mescolate bene.

Grouper 1 kg
Cherry tomatoes or peeled cherry tomatoes 500 gr
Taggiasca olives 2 tbsp
Salted capers (if you like them)
2 cloves garlic
Extra virgin olive oil As required
Thyme Just enough
Parsley Just enough
Dried oregano Just enough
Pepper / Salt Enough
Pasta 500 gr
A glass of white wine

Procedure grouper and cherry tomatoes:

If you have fresh cherry tomatoes, wash them and cut them into four parts otherwise: Peel the garlic and fry it with a few tablespoons of extra virgin olive oil in a large non-stick pan. Add the peeled tomatoes (or cherry tomatoes) and cook for 5 minutes.
Season with salt and add the pitted olives (whole or cut according to your taste). If you like, you can also add some desalted capers.
Add the grouper wet with white wine and close with the lid.

The cooking time depends on the size of the grouper, mine took half an hour, you always pull the fin that is on the back, when you remove it, it means that the fish is ready.

Add the ground pepper and aromatic herbs (parsley and chopped thyme) and the dried oregano. Eliminate the garlic.
Serve the grouper with the cherry tomatoes hot accompanying it with plenty of toasted bread and raw extra virgin olive oil.

Or as I do, prepare the pasta in plenty of salted water, clean the grouper, make it into small pieces and mix well.
