Caprese al cacao ricetta di Antonino Cannavacciuolo

Ho “conosciuto” Antonino Cannavacciuolo guardando il suo programma MasterChef, mi piace molto come cucina, così ho deciso di acquistare i suoi libri di cucina e in uno di questi ho trovato questa buonissima ricetta della caprese al cacao.

Caprese al cacao ricetta di Antonino Cannavacciuolo ingredienti:

50 g cacao amaro
450 g farina di mandorle
30 g filetti di mandorle per decorare facoltarivi

280 g burro
220 g zucchero a velo
240 g uova più 40 g tuorlo d’uovo
In tutto ho usato 8 uova
60 g albume d’uovo
75 g zucchero semolato


Preparazione Caprese al cacao ricetta di Antonino Cannavacciuolo:

Mi raccomando tutti gli ingredienti per montare bene, devono essere a temperatura ambiente.

Montate gli albumi a neve con lo zucchero semolato.
Montate con una frusta elettrica il burro a temperatura ambiente con lo zucchero a velo finché avrà raggiunto una consistenza cremosa.

Sbattete le uova con i tuorli e versateli a filo nel composto di burro montato. Incorporate quindi un terzo degli albumi montati, mescolando dal basso in alto per non smontare il composto.

Unite a poco alla volta il cacao amaro e la farina di mandorle. Infine incorporate, sempre dal basso in alto, il resto degli albumi montati.

Disponete le mandorle a filetti sul fondo di una tortiera precedentemente imburrata e infarinata oppure coperta da carta forno, versatevi il composto senza smontarlo.

Fate cuocere nel forno preriscaldato a 180° C per circa 30 minuti (se la caprese si colora troppo in superficie, abbassate la temperatura), lasciate raffreddare e sfornate.

Al momento di servire, spolverizzate con lo zucchero a velo.

Whip the butter at room temperature with the icing sugar with an electric whisk until it reaches a creamy consistency.

 

Beat the eggs with the yolks and pour them into the whipped butter mixture. Then incorporate a third of the whipped egg whites, stirring from bottom to top so as not to disassemble the mixture.

 

Gradually add the bitter cocoa and almond flour. Finally, incorporate the rest of the whipped egg whites, always from bottom to top.

 

Arrange the sliced ​​almonds on the bottom of a previously greased and floured cake pan or covered with parchment paper, pour in the mixture without removing it.

 

Bake in a preheated oven at 180 ° C for about 30 minutes (if the caprese is too colored on the surface, lower the temperature), let it cool and take it out of the oven.

 

Just before serving, sprinkle with icing sugar.
