Totano ripieno ricetta classica

Quando i miei cognati vanno a pesca e prendono i totani, sono sempre alla ricerca di nuovi modi per cucinarli, una ricetta classica è questa.

Ingredienti Totano ripieno ricetta classica:

3 cucchiai Olio Di Oliva Extravergine

150 g Pancarré

50 g Pecorino

qb Pepe

30 g Pinoli

qb Prezzemolo

qb Sale

2 n Scalogno

1 ramo Timo

8 n Totano

2 n Uova

30 g Uva Sultanina/uvetta (a me non piace il dolce nel salato e quindi non lo metto ve l’ho segnato per precisione di ricetta)

1 bicchiere di Vino Bianco per sfumare

Preparazione Totano ripieno  ricetta classica:

Fate rinvenire l’uvetta per 10 minuti in una ciotola con acqua tiepida (procedimento che ho saltato). Grattugiate il pecorino, lavate e tritate il prezzemolo, e sminuzzate i pinoli.

Togliete la crosta dal pancarre e immergetelo nel vino, strizzatelo e sminuzzatelo finemente. Filtrate il vino e tenetelo da parte.

Staccate la testa dai totani, privatela degli occhi e tritatela assieme ai tentacoli; pulite le sacche svuotandole dalle interiora e dalla conchiglia trasparente, quindi togliete la pelle. Asciugate i molluschi, anche internamente, con la carta da cucina. Se li comprate in pescheria fateveli pulire da loro, non comprateli congelati non hanno lo stesso sapore.

Mettete in una ciotola: il totano tritato, il pancarrè, le uova, l’uvetta strizzata, i pinoli, il pecorino, il prezzemolo, sale, pepe e amalgamate. Riempite i totani con il composto per 2/3 e chiudeteli con stecchini di legno.

Rosolate nell’olio extravergine gli scalogni mondati e tritati sottilmente, unite i totani e fateli rosolare 2-3 minuti sui entrambi i lati, quindi bagnate con il vino e aggiungete il timo.

Lasciate cuocere con il coperchio per 30 minuti girando ogni tanto i molluschi, salate e servite. Se volete servirli stesi come ho fatto io, dovete aspettare che si raffreddino, conservate il sughetto per aggiungerlo al momento di mangiare e scaldate 5 minuti in forno prima di servire.

Ingredients Stuffed squid classic recipe:

3 tbsp extra virgin olive oil

150 g Pancarré

50 g Pecorino

to taste Pepper

30 g pine nuts

to taste Parsley

Salt to taste

2 n Shallot

1 Thyme branch

8 n Squid

2 n Eggs

30 g Sultana / raisins (I do not like sweet in salty and therefore I do not put it, I marked it for recipe precision)

1 glass of white wine to blend

Preparation Squid stuffing classic recipe:

Leave the raisins to soak for 10 minutes in a bowl with warm water (which I skipped). Grate the pecorino, wash and chop the parsley, and chop the pine nuts.

Remove the crust from the pancarre and dip it in the wine, squeeze it and finely chop it. Strain the wine and keep it aside.

Remove the head from the squid, deprive it of the eyes and chop it together with the tentacles; clean the bags by emptying them from the entrails and the transparent shell, then remove the skin. Dry the shellfish, even internally, with kitchen paper. If you buy them in a fish shop, have them cleaned by them, do not buy them frozen they do not have the same taste.

Put in a bowl: the minced squid, the sandwich bread, the eggs, the squeezed raisins, the pine nuts, the pecorino cheese, the parsley, salt, pepper and mix. Fill the squid with 2/3 of the mixture and close them with wooden sticks.

Brown the peeled and finely chopped shallots in the extra virgin olive oil, add the squid and sauté 2-3 minutes on both sides, then pour in the wine and add the thyme.

Leave to cook with the lid on for 30 minutes, turning the shellfish occasionally, salt and serve. If you want to serve them straight as I did, you have to wait for them to cool down, keep the sauce to add it when you eat and heat 5 minutes in the oven before serving.
