Ricette con i bagel

Il Bagel è un tipo di pane dalla forma a ciambella solitamente farcito nei modi più svariati e venduto come street food.

La prima volta l’ho mangiato per colazione a Londra accompagnato da Philadelphia e marmellata, buonissimo ed è nato un amore! Così ho deciso di cercare un po’ di ricette con i bagel e prepararli.

Le sue origini sono ebraiche e risalgono al 1600, quando in Cracovia questo pane veniva regalato alle donne in occasione del parto perché la sua forma simboleggiava il cerchio della vita.

Col tempo le comunità ebraiche hanno fatto modo che questo pane diventasse popolare anche nel resto del mondo, in particolar modo in alcune città come New York, Montreal e Toronto dove i Bagel sono entrati nel quotidiano cittadino.

Il 9 febbraio è il giorno dedicato a questo pane. Stati Uniti, Canada, Regno Unito, Germania dedicano questo giorno alla preparazione e farcitura dei Bagels, da quelli salati a quelli dolci, ognuno da sfogo alla fantasia. Unica regola… riuscire ad assaggiarne quanto più si può!

Ecco le Ricette con i bagel:

Crema di formaggio delicata, salmone marinato a secco e profumato al finocchietto selvatico e fettine di mele Granny, il tutto condito con un filo d’olio extravergine d’oliva.

Fesa di tacchino, pomodoro, insalata, cipolla e un leggero strato di maionese.

Scarola riccia appena scottata con: capperi, pinoli, patè d’olive nere e tonno sott’olio.

Caprese pomodoro, mozzarella e basilico un classico della cucina italiana!

Salsiccia, pomodoro e caciotta piccante con una composta di peperoncini piccanti e peperoni.

French- Bagel: Omelette ai funghi con bacon grigliato e formaggio fuso.

Pink Prawn (gamberi, insalata e salsa rosa) per gli amanti del cocktail di gamberi!

L’English (Prosciutto cotto, o Bacon, con uova, pomodoro e formaggio)… una colazione all’inglese a portata di Bagel.

Milan con cotoletta e insalata, dal gusto semplice e indicato per i più piccoli e i tradizionalisti.

Chichen spring: Petto di pollo, melanzane grigliate, mandorle tostate, rucola e crema di formaggio.

Bagel con: Wrustel tedeschi, crauti e senape.

Per ultimo Bagel dolci con la crema di nocciola o  marmellata.

Ma veniamo alla ricetta vera e propria.

Ingredienti per i bagel:

Farina manitoba 250 gr, Farina 00 200 gr, Sale 6 gr, Lievito di birra 15 gr (oppure se disidratato 6gr ) Latte fresco intero 225 ml, Acqua 50 ml, Zucchero 1 cucchiaino, Malto 1 cucchiaino, Burro 25 gr, Uova 1 medio.

Procedimento per preparare i bagel:

In un contenitore versate il latte tiepido, aggiungete lo zucchero, il lievito, il malto e mescolate per sciogliere il tutto.

Fate una fontana con le due farine e versate il composto di latte al centro della farina.

Impastate unendo l’uovo a temperatura ambiente, aggiungete anche i 50 ml di acqua tiepida, nella quale avrete precedentemente sciolto il sale e amalgamate per bene gli ingredienti.

A questo punto aggiungete il burro a pezzetti ammorbidito; impastate bene il tutto per almeno 10 minuti fino ad ottenere un composto liscio, elastico ed omogeneo.

Spennellate una ciotola con un filo di olio di semi, quindi adagiatevi l’impasto ottenuto che spennellerete anch’esso con pochissimo olio, coprite la ciotola con della pellicola trasparente e lasciate lievitare per un paio di ore a 30° o fino a che il volume non sarà raddoppiato.

Dopodiché prendete il composto e dividetelo in 12 palline nelle quali praticherete un foro al centro con le dita.

Mettete nuovamente a lievitare per altri 30-40 minuti i bagels su di una teglia foderata con carta forno a 30°.

Nel frattempo mette a bollire dell’acqua in una pentola e versateci un cucchiaino di malto.

Prendete i Bagel e metteteli nell’acqua, lasciate sobbollire per 10 secondi i bagels, facendo sì che si bagnino su entrambi i lati, poi estraeteli sgocciolandoli per bene con una schiumarola e poggiateli su di una teglia foderata con carta forno.

Cospargete i bagels con i semini prescelti (papavero, sesamo, anice, finocchio, ecc…) e infornateli immediatamente a 220° per circa 20 minuti.

Here are the recipes with the bagels:

But let’s get to the actual recipe.

Ingredients for bagels:

Manitoba flour 250 gr, 00 flour 200 gr, salt 6 gr, brewer’s yeast 15 gr (or if dehydrated 6 gr) Fresh whole milk 225 ml, water 50 ml, sugar 1 teaspoon, malt 1 teaspoon, butter 25 gr, eggs 1 medium .

Procedure for making bagels:

In a container pour the warm milk, add the sugar, the yeast, the malt and mix to dissolve everything.

Make a fountain with the two flours and pour the milk mixture into the center of the flour.

Knead by mixing the egg at room temperature, also add the 50 ml of warm water, in which you have previously dissolved the salt and mix the ingredients well.

At this point add the softened butter into small pieces; mix well for at least 10 minutes until a smooth, elastic and homogeneous mixture is obtained. Brush a bowl with a drizzle of seed oil, then lay the mixture obtained which you will also brush with very little oil, cover the bowl with plastic wrap and let it rise for a couple of hours at 30 ° or until the volume will not be doubled.

Then take the mixture and divide it into 12 balls in which you will make a hole in the center with your fingers. Put the bagels to rise again for another 30-40 minutes on a pan lined with parchment paper at 30 °. In the meantime, boil water in a saucepan and pour a teaspoon of malt into it.

Take the Bagels and put them in the water, let the bagels simmer for 10 seconds, making them wet on both sides, then remove them by dripping them well with a slotted spoon and place them on a baking tray lined with parchment paper.

Sprinkle the bagels with the selected seeds (poppy, sesame, anise, fennel, etc …) and bake them immediately at 220 ° for about 20 minutes.
