Stinco di maiale al forno

In genere compro lo stinco di maiale per preparare il brodo di carne e ci cucino i tortellini, i canederli o semplicemente la pastina.

Quando l’ho ordinato dal macellaio di fiducia gli ho detto appunto che mi serviva per il brodo e lui mi dice: “ma lo stinco di maiale è buonissimo anche al forno!” davvero? O__o questa era più o meno la mia faccia. Ma è un muscolo non viene duro? No, no viene morbidissimo mi dice il macellaio, ed io mi sono fidata. Devo dire che aveva ragione, era così buono che non ho nemmeno la foto dello stinco al forno cucinato, se lo sono mangiato in un baleno! Ma veniamo alla ricetta.

E’ una ricetta molto economica lo stinco l’ho pagato 3 euro e servono pochi altri ingredienti, personalmente ho aggiunto le patate novelle pagate 2 euro, praticamente con 5 euro ho fatto una cena per quattro.

Ingredienti stinco di maiale al forno:

1 stinco di maiale

sale/pepe q.b.

1 bicchiere di vino bianco

brodo di carne

bacche di ginepro

3 scalogni

patate novelle 1 vaschetta

olio Evo

rosmarino 1 rametto

Procedimento stinco di maiale al forno:

La ricetta originale prevedeva di rosolare lo stinco prima sul fuoco e poi nel forno, ma io mi scoccio di sporcare tante cose, ho i pirex per il forno che per il fuoco non vanno bene, così ho messo direttamente tutto nel forno ma è venuto rosolato bene lo stesso.

Ho messo un po’ di olio nella teglia, aggiunto lo stinco, le bacche di ginepro schiacciate, gli scalogni puliti ma interi, il rametto di rosmarino, un po’ si sale e una macinata di pepe sulla carne. Contorno di patate novelle e infornato alla massima potenza.

Dopo dieci minuti ho aggiunto il bicchiere di vino, dopo altri 10 minuti il brodo. Trascorsi altri 10 minuti l’ho girato e dopo mezz’ora l’ho sfornato. Un ora nel mio caso è bastata perché lo stinco non era grande, voi fate sempre la prova stecchino per vedere il liquido come fuoriesce: Se è rosso lasciate ancora un po’ in forno, altrimenti è pronto.

O__o this was more or less my face. But is a muscle not hard? No, no, it’s very soft, the butcher tells me, and I trusted him. I must say he was right, it was so good that I don’t even have a photo of the cooked shin cooked, if I ate it in a flash! But let’s get to the recipe.

It is a very inexpensive recipe. I paid the shin 3 euros and few other ingredients are needed, I personally added the new potatoes paid 2 euros, practically with 5 euros I made a dinner for four.

Baked pork knuckle ingredients:

1 pork shank

salt / pepper to taste

1 glass of white wine

beef broth

Juniper berries

3 shallots

new potatoes 1 tray

extra virgin olive oil

rosemary 1 sprig

Baked pork knuckle procedure:

The original recipe was to brown the shank first on the fire and then in the oven, but I get annoyed with so many things, I have pyrex for the oven which is not good for the fire, so I put everything directly in the oven but it came browned well the same.

I put some oil in the pan, added the shank, the crushed juniper berries, the clean but whole shallots, the sprig of rosemary, a little salt and a ground pepper on the meat. Side dish of new potatoes and baked at maximum power. After ten minutes I added the glass of wine, after another 10 minutes the broth. after another 10 minutes I turned it and after half an hour I baked it. An hour in my case was enough because the shin was not large, you always do the toothpick test to see the liquid as it comes out: If it is red, leave a little more in the oven, otherwise it is ready.
