Pesce cotto al marsala

Oggi ho preparato il pesce cotto al marsala servito con un contorno di carote e insalata.

Ingredienti pesce al marsala:

qb Burro

qb Farina

1 bicchiere di Marsala

qb Olio Di Oliva

qb Pepe In Grani

qb Prezzemolo

qb Sale/pepe

4 filetti di scorfano

Preparazione pesce al marsala:

Sventrate e spellate il pesce, poi ricavate da ciascuna i filetti, che passerete in un po di farina. Potete farvelo fare dal pescivendolo se non ne siete capaci. Se come nel mio caso i filetti sono congelati, metteteli a scongelare dalla mattina nel frigorifero.

Con gli scarti del pesce  preparate un fumetto, nel mio caso ho usato quello granulare.

Fate scaldare in una padella 30 g di burro e 2 cucchiai di olio; adagiatevi dentro i filetti e fateli colorire da entrambe le parti, girandoli a meta cottura.

Spruzzateli con il Marsala che farete parzialmente evaporare. Salate, pepate e aggiungete un po di prezzemolo.

Today I prepared the fish cooked in marsala served with a side dish of carrots and salad.

Marsala fish ingredients:

qb Butter

to taste flour

1 glass of Marsala

to taste Olive Oil

to taste Peppercorns

to taste Parsley

to taste Salt / pepper

4 redfish fillets

Marsala fish preparation:

Gut and peel the fish, then make the fillets from each, which you will pass in a little flour. You can get it from the fishmonger if you are not capable of it. If, as in my case, the fillets are frozen, put them to thaw in the refrigerator from the morning.

With fish scraps, prepare a comic strip, in my case I used the granular one.

Heat 30 g of butter and 2 tablespoons of oil in a pan; lay the fillets in and let them color on both sides, turning them halfway through cooking.

Sprinkle them with Marsala which you will partially evaporate. Salt, pepper and add a little parsley.
