Polpette di lenticchie e carote al forno

È ormai noto da tempo che mangiare troppa carne fa male alla salute e all’ambiente. I legumi possono essere una buona alternativa alla carne, perché sono ricchi di proteine e ferro. Questa ricetta è ottima anche per i vegani, in quanto completamente priva di ingredienti di origine animale.

Ingredienti per circa tre persone Polpette di lenticchie e carote al forno:

200 grammi di lenticchie, 4 carote, mezza cipolla, pangrattato possibilmente integrale, farina integrale di mais per polenta, sale e olio.

Procedimento Polpette di lenticchie e carote al forno:

Lessare le lenticchie, salarle solo verso fine cottura e scolarle cercando di rimuovere il più possibile l’acqua. Pulite le carote e tagliatele a rondelle, a questo punto fatele bollire per qualche minuto. Tritate ben bene una cipolla piccola o mezza grande.

Dopo aver lasciato raffreddare le lenticchie, unite tutti gli ingredienti e frullate tutto. Aggiunte due o tre cucchiai di pangrattato. Formate delle palline e passatele nella farina di mais per polenta. Infine disponetele all’interno di una teglia e aggiungete un po’di olio. Vanno cotte per circa 20 – 25 minuti a 200 gradi. Se non avete voglia di accendere il forno vengono bene anche in padella.

200 grams of lentils, 4 carrots, half an onion, possibly wholemeal breadcrumbs, wholemeal corn flour for polenta, salt and oil.

Boil the lentils, salt them only towards the end of cooking and drain them trying to remove as much water as possible. Clean the carrots and cut them into slices, at this point boil them for a few minutes. Chop a small or half large onion very well.

After letting the lentils cool, add all the ingredients and blend everything. Add two or three tablespoons of breadcrumbs. Make small balls and pass them in the cornmeal for polenta. Finally arrange them in a pan and add a little oil. They should be cooked for about 20 – 25 minutes at 200 degrees. If you don’t feel like turning on the oven, they also work well in a pan.
