In una capiente ciotola, o nel vaso del mixer setacciate la farina con lo zucchero, aggiungete le spezie e il bicarbonato e in ultimo il burro freddo tagliato a tocchetti;

Trascorso il tempo necessario, stendete l’impasto con un mattarello fino ad ottenere una sfoglia dello spessore di circa 4 mm;

Nel frattempo preparate la glassa montando a neve ferma l’albume e incorporando poco alla volta, sempre sbattendo, lo zucchero al velo;

All’occorrenza va scongelato in frigorifero prima di stendere e realizzare i biscotti.

Buone feste, Angela.

How to make the gingerbread house

My friend Bruna created the gingerbread houses in my opinion are beautiful for those who want to make them as a Christmas gift. The houses can also be filled with: chocolates, biscuits and more. Obviously to put before closing the house, afterwards it will no longer be possible. If you are not able to do it yourself, you can contact her, I have tasted her sweets and besides being beautiful they are also good, you will make an original, edible gift, beautifully packaged and handmade.

How to make the gingerbread house ingredients:

00 flour 350 g
Sugar 160 g
Butter 150 g
Eggs 1
Salt up to a pinch
Honey 150 g
Ginger powder 2 tsp
Cinnamon powder 2 tsp
Nutmeg 1 pinch
Bicarbonate ½ tsp
Ground cloves ½ tsp

FOR COLORED GLAZE:

Food dyes to taste
Icing sugar 150 g
Egg whites 30 g

How to make the gingerbread house procedure:

In a large bowl, or in the mixer bowl, sift the flour with the sugar, add the spices and baking soda and finally the cold butter cut into chunks;

Add the honey and operate the whisk at medium speed until a crumb mixture is obtained. Finally also add the egg and knead a few more moments until you get a ball.
Wrap the gingerbread dough in plastic wrap and place it in the refrigerator for about 2 hours.
After the necessary time, roll out the dough with a rolling pin until you get a sheet of about 4 mm thick;

cut out some shapes with cutters of different Christmas shapes that you need, place on a pan covered with parchment paper and put in a hot oven at 180 ° for about 10-12 minutes, until they are golden brown.
In the meantime, prepare the glaze by whipping the egg white until stiff and incorporating the icing sugar little by little, still beating;

Divide the glaze into as many bowls as there are colors you want to use and add a food coloring to each.

Place the icing in a pastry bag with the smooth and very narrow nozzle, and decorate your gingerbread cookies as desired.

Storage:

Store the gingerbread cookies in a tin box, for a maximum of 4-5 days.
The biscuit dough can be frozen wrapped with plastic wrap for about 1 month. If necessary, it must be thawed in the refrigerator before rolling out and making the biscuits.

This dough must be worked very quickly and placed in the refrigerator to firm up to be handled without problems. When you cut out the shape, therefore, work in a cool environment and help yourself by flouring the pastry board and spreading only the dough you need, keeping the other in the fridge until it is his turn.

Happy holidays, Angela.
