Pesce al forno peperone e scalogno

Dopo tanto mangiare che abbiamo fatto durante questa settimana di ferie di ferragosto, avevo voglia di un piatto leggero compreso di antipasto così ho deciso di cucinare il pesce.

Ingredienti Pesce al forno peperone e scalogno:

400 gr. rana pescatrice a filetti o un altro pesce a vostro piacimento
1 peperone rosso
1 peperone giallo
10 foglie di basilico
250 gr di patate novelle
1 cucchiaio capperi sotto sale
2 cucchiai olive verdi snocciolate
2 scalogni
2 cucchiai olio extravergine d’oliva
6 filetti d’acciuga sott’olio
brodo vegetale
sale/pepe q.b.

Procedimento Pesce al forno peperone e scalogno:

Pelate gli scalogni e tagliateli. Pulite e squamate il pesce.
Lavate i peperoni ed eliminate il gambo, togliete anche i semi e i filamenti bianchi, tagliate a pezzetti.
Dissalate i capperi passandoli sotto l’acqua.
Aggiungete le olive verdi snocciolate.I filetti di pesce. Le patate novelle (nel mio caso erano già a mezza cottura, altrimenti non vi trovereste con i tempi di cottura).
Mettete nel ruoto i filetti di acciuga e poi tagliateli a pezzetti.
Versate l’olio extravergine di oliva.

Accendete il fuoco e girate gl’ingredienti un paio di volte in modo che si insaporiscano e fate cuocere per 5 minuti.
Bagnate con un mestolo di brodo vegetale caldo, mettete in forno preriscaldato a 180° e cucinate per 15 minuti, controllando che il fondo di cottura non si ritiri troppo, altrimenti aggiungete altro brodo.
Trascorso il tempo, condite con un pizzico di sale, il pepe verde appena macinato ed unite le foglie di basilico.

Baked fish pepper and shallot – english version

After so much eating that we had during this week of August holidays, I wanted a light dish including an appetizer so I decided to cook fish.

Ingredients Baked fish pepper and shallot:

400 g fillet anglerfish or another fish at your leisure
1 red pepper
1 yellow pepper
10 basil leaves
250 gr of new potatoes
1 tablespoon capers in salt
2 tablespoons pitted green olives
2 shallots
2 tablespoons of extra virgin olive oil
6 anchovy fillets in oil
vegetable broth
salt / pepper to taste

Baked fish, pepper and shallot:

Peel the shallots and cut them. Clean and scale the fish.
Wash the peppers and remove the stem, also remove the seeds and white filaments, cut into small pieces.
Desalinate the capers by passing them under water.
Add the pitted green olives. The fish fillets. The new potatoes (in my case they were already half cooked, otherwise you would not find yourself with the cooking times).
Put the anchovy fillets in the roll and then cut them into small pieces.
Pour the extra virgin olive oil.

Turn on the heat and turn the ingredients a couple of times so that they flavor and cook for 5 minutes.
Wet with a ladle of hot vegetable broth, put in a preheated oven at 180 ° and cook for 15 minutes, checking that the cooking medium does not shrink too much, otherwise add more broth.
After the time, season with a pinch of salt, the freshly ground green pepper and add the basil leaves.

Turn off the oven, plate and enjoy your meal, Angela.
