Pollo alla griglia cucinato in casa

Oggi ho preparato il: Pollo alla griglia cucinato in casa. Vi starete chiedendo qual è la differenza tra il normale pollo al forno cucinato in teglia? Che è più buono! Ora vi spiego come, sabato scorso sono stata ad un evento a Milano con lo chef Simone Rugiati, era un evento sul pollo, se volete saperne di più basta che seguite l’hashtag sui social #wilpollo.

Ci ha dato un sacco di diritte su come cucinarlo. Ad esempio l’altra sera per fare una fetta di petto di pollo alla griglia (che però a me fa tanto triste) l’ho lasciata marinare mezza giornata nel latte, e in effetti è venuta più buona e meno “secca”.

La ricetta che mi è piaciuta di più è questa che vi metto del pollo alla griglia.

La mia amica Chiara quando ha visto questa foto, mi ha detto che il marito in genere preferisce il pollo comprato già cotto. L’ho rassicurata che era in buona compagnia.

Proprio per questo durante l’evento è uscita fuori questa ricetta, ci lamentavamo tutte che il pollo arrosto “comprato” era più buono del nostro cucinato in casa, com’era possibile?

Simone Rugiati ci ha spiegato che noi in realtà cuciniamo il pollo in teglia che è una preparazione diversa, quello arrosto giustamente sta sul girarrosto che in genere i nostri forni casalinghi non hanno.

Per ovviare a questo inconveniente ci ha insegnato a cucinare il pollo sulla griglia come sto facendo io nella foto che vedete sopra, e ci ha detto pure un trucco per farlo croccante, basta spennellare il pollo a metà cottura con lo sciroppo d’acero e verrà bello scuro!

Posizionate il pollo sulla griglia (lavato, salato e pepato) a metà forno e poi sotto mettete la teglia piena d’acqua, così il forno: non si sporca, questo accorgimento non fa fare fumi, schizzi e mantiene l’ambiente sufficientemente umido così da rendere il pollo succoso.

La cottura in forno, preriscaldato a 200 °, dura in media un ora, io ho messo il timer ogni 10 minuti e rabboccavo l’acqua se serviva.

Una mia amica mi ha detto che nella teglia avrei potuto mettere delle patate a tocchetti da fare per contorno, magari la prossima volta proverò.

Però in questo caso il pollo non deve essere troppo grasso, perché noi facciamo questa cottura anche per rendere il pollo più salutare, se poi il grasso lo prendono le patate sotto, forse non vale. 😀

He gave us a lot of tips on how to cook it. For example, the other night to make a slice of grilled chicken breast (which is so sad to me) I let it marinate half a day in milk, and in fact it came out better and less “dry”.

The recipe that I liked the most is this one that I put on the grilled chicken.

When my friend Chiara saw this photo, she told me that her husband generally prefers chicken that has already been cooked. I reassured her that she was in good company.

Precisely for this reason, during the event this recipe came out, we all complained that the “bought” roast chicken was better than our home-cooked, how was it possible?

Simone Rugiati explained to us that we actually cook chicken in a pan which is a different preparation, the roasted one rightly lies on the rotisserie that our home ovens generally do not have.

To overcome this inconvenience he taught us to cook the chicken on the grill as I am doing in the photo you see above, and he also told us a trick to make it crispy, just brush the chicken halfway through the cooking with maple syrup and it will come nice dark!

Place the chicken on the grill (washed, salted and peppered) halfway through the oven and then put the pan full of water under it, so the oven: it does not get dirty, this arrangement does not make fumes, splashes and keeps the environment sufficiently humid to make the chicken juicy.

Baking takes an hour on average, preheated to 200 °, I set the timer every 10 minutes and topped up the water if needed.

A friend of mine told me that in the pan I could put some potatoes into chunks to make as a side dish, maybe next time I’ll try.

But in this case the chicken must not be too fat, because we do this cooking also to make the chicken healthier, if the fat is taken by the potatoes underneath, perhaps it is not worth it. 😀
