Zeppole di Natale

Un dolce tipico che mangiamo di questi periodi nel sud Italia sono le Zeppole di Natale, se avete il Bimby su Supermamma ho pubblicato la ricetta delle zeppole che potete preparare con lui, se invece non l’avete questa è la ricetta tradizionale.

Ingredienti Zeppole di Natale:

1 kg di farina

30 g di lievito di birra

400 g di patate lessate e schiacciate

400 g di latte intero

400 g di acqua

60 g di uva passa ammollata nel moscato e asciugata

50 g di pinoli

Sale q.b.

 

Per il condimento Zeppole di Natale:

200 g di miele di agrumi

200 g di miele millefiori

150 g di buccia di mandarino tagliata

100 g di buccia di arancia tagliata

100 g di buccia di limone tagliata

80 g di liquore d’anice

zuccherini colorati

Procedimento Zeppole di Natale:

Unire l’acqua ed il latte.

In una zuppiera aggiungere la farina, le patate (precedentemente lessate e schiacciate) ed il lievito.

Iniziare a mescolare il tutto. Aggiungere mano a mano il latte e l’acqua fino ad ottenere un composto omogeneo, morbido, lavorandolo energicamente per alcuni minuti.

Riporre da parte l’impasto coperto e lasciarlo lievitare fino a quando avrà raddoppiato il suo volume.

In una terrina spolverare di farina l’uva passa, unirvi i pinoli ed infine aggiungere un pizzico di sale. Mischiare il tutto.

Riprendere a lavorare l’impasto precedentemente lievitato e aggiungere man mano l’uva passa ed i pinoli (io non li metto perché in famiglia a noi non piacciono). Copriamo e mettiamo a lievitare nuovamente.

Quando il composto avrà raggiunto nuovamente il doppio del suo volume, sarà pronto per essere fritto.

In una padella far riscaldare l’olio extravergine di oliva: quando avrà raggiunto la giusta temperatura, friggere le zeppole che avrete precedentemente fatto a rotolini e modellate con le mani a forma di nocchette.

Per il condimento Zeppole di Natale:

In una pentola mettere il miele (millefiori e di agrumi), le bucce di mandarino, di arancia, di limone e il liquore d’anice fino ad ottenere uno sciroppo.

Sistemare le zeppole nel piatto coprire con il miele e guarnire con gli zuccherini colorati.

Christmas Zeppole procedure:

Add the water and milk.

In a bowl add the flour, the potatoes (previously boiled and mashed) and the yeast.

Start mixing everything. Gradually add the milk and water until a homogeneous, soft mixture is obtained, working vigorously for a few minutes.

Set aside the covered dough and let it rise until it has doubled in volume.

In a bowl sprinkle the raisins with flour, add the pine nuts and finally add a pinch of salt. Mix everything.

Resume working the previously leavened dough and gradually add the raisins and pine nuts (I don’t add them because we don’t like them in the family). We cover and put to rise again.

When the mixture reaches twice its volume again, it will be ready to be fried.

In a pan, heat the extra virgin olive oil: when it has reached the right temperature, fry the zeppole that you have previously made in rolls and molded with your hands in the shape of nozzles.

For the Christmas Zeppole dressing:

In a saucepan, put the honey (millefiori and citrus), the tangerine, orange, lemon and anise liqueur until a syrup is obtained.

Arrange the zeppole on the plate, cover with honey and garnish with the colored sugars.
